Instructions
- In a large bowl, combine cooked quinoa, black beans, corn, diced bell pepper, and avocado.
- In a small bowl, whisk together lime juice, cumin, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Gently fold in the fresh cilantro.
