This rich and creamy chocolate mousse is the perfect elegant dessert for any occasion. It’s light, airy, and full of chocolate flavor, making it a crowd-pleaser.

- 2 cups heavy cream, divided
- 8 ounces semi-sweet chocolate, chopped
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- Chocolate shavings or berries for garnish
Instructions
- In a heatproof bowl, melt the chopped chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
- In a medium bowl, beat 1 cup of heavy cream until soft peaks form. Set aside.
- In another bowl, whisk egg yolks, sugar, and vanilla extract until pale and fluffy. Gradually mix in the melted chocolate until well combined.
- In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture until no white streaks remain.
- Fold in the whipped cream until just combined, being careful not to deflate the mixture.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours to set.
- Before serving, whip the remaining cup of heavy cream and top each mousse with a dollop of whipped cream and garnish with chocolate shavings or berries.
Notes
- For a richer flavor, use dark chocolate instead of semi-sweet.
- Make sure the chocolate is not too hot when mixing with egg yolks to avoid cooking them.
- This mousse can be made a day in advance and stored in the refrigerator.
