Ingredients

  • 2 cups heavy cream, divided
  • 8 ounces semi-sweet chocolate, chopped
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Chocolate shavings or berries for garnish

Instructions

  1. In a heatproof bowl, melt the chopped chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a medium bowl, beat 1 cup of heavy cream until soft peaks form. Set aside.
  3. In another bowl, whisk egg yolks, sugar, and vanilla extract until pale and fluffy. Gradually mix in the melted chocolate until well combined.
  4. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture until no white streaks remain.
  5. Fold in the whipped cream until just combined, being careful not to deflate the mixture.
  6. Spoon the mousse into serving dishes and refrigerate for at least 2 hours to set.
  7. Before serving, whip the remaining cup of heavy cream and top each mousse with a dollop of whipped cream and garnish with chocolate shavings or berries.

Notes

  • For a richer flavor, use dark chocolate instead of semi-sweet.
  • Make sure the chocolate is not too hot when mixing with egg yolks to avoid cooking them.
  • This mousse can be made a day in advance and stored in the refrigerator.
