  • 200g unsalted butter
  • 150g granulated sugar
  • 4 large eggs
  • 4 large egg yolks
  • 100g all-purpose flour
  • Pinch of salt
  • Butter for greasing ramekins
  • Cocoa powder for dusting
  • Fresh berries and mint leaves for garnish

Instructions

  1. Preheat the oven to 200°C (390°F). Grease six ramekins with butter and dust with cocoa powder. Place them on a baking tray.
  2. In a saucepan, melt the dark chocolate and butter together over low heat, stirring until smooth. Remove from heat and let cool slightly.
  3. In a large mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until pale and fluffy.
  4. Gently fold the melted chocolate mixture into the egg mixture until well combined.
  5. Sift in the flour and salt, and fold gently until just combined. Be careful not to overmix.
  6. Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the center is still soft.
  8. Remove from the oven and let cool for 1 minute before carefully inverting onto plates.
  9. Serve immediately with fresh berries and mint leaves for garnish.

  • For best results, use high-quality dark chocolate.
  • Serve immediately for a gooey center. If you want to prepare ahead, you can refrigerate the batter in the ramekins and bake them just before serving.
