- 1 teaspoon vanilla extract
Instructions
- In a bowl, combine sliced strawberries and granulated sugar. Toss gently and let sit for 15-30 minutes to macerate.
- Preheat the oven to 425°F (220°C).
- In a large bowl, whisk together flour, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the heavy cream and vanilla extract until just combined. Do not overmix.
- Turn the dough onto a lightly floured surface and gently knead it a few times. Pat into a 1-inch thick round.
- Cut into rounds using a biscuit cutter and place on a baking sheet.
- Bake for 12-15 minutes or until golden brown.
- Allow biscuits to cool slightly before assembling.
- To serve, slice the biscuits in half, layer with macerated strawberries, and top with whipped cream.
Notes
- You can substitute the heavy cream with coconut cream for a dairy-free version.
- Feel free to add a splash of lemon juice to the strawberries for extra brightness.
