Instructions

  1. In a bowl, combine sliced strawberries and granulated sugar. Toss gently and let sit for 15-30 minutes to macerate.
  2. Preheat the oven to 425°F (220°C).
  3. In a large bowl, whisk together flour, baking powder, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the heavy cream and vanilla extract until just combined. Do not overmix.
  6. Turn the dough onto a lightly floured surface and gently knead it a few times. Pat into a 1-inch thick round.
  7. Cut into rounds using a biscuit cutter and place on a baking sheet.
