Description
A classic fresh strawberry dessert made with layers of sweetened strawberries, fluffy whipped cream, and buttery shortcake biscuits.

- 4 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 cup granulated sugar (for shortcakes)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream (plus more for serving)
- 1 teaspoon vanilla extract
Instructions
- In a medium bowl, combine sliced strawberries and 1/4 cup sugar. Toss to coat and set aside to macerate for at least 30 minutes.
- Preheat oven to 425°F (220°C).
- In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Stir in heavy cream and vanilla extract until just combined. Do not overmix.
- Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick rectangle.
- Cut out shortcakes using a biscuit cutter and place on a baking sheet.
- Bake for 12-15 minutes or until golden brown. Let cool slightly.
- To assemble, slice shortcakes in half, layer on macerated strawberries and whipped cream, and top with the other half of the shortcake.
- Serve immediately with additional whipped cream and strawberries.
Notes
- For extra flavor, add a splash of lemon juice to the strawberries.
- Shortcakes can be made ahead of time and stored in an airtight container.
