Ingredients

  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar (for shortcakes)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream (plus more for serving)
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, combine sliced strawberries and 1/4 cup sugar. Toss to coat and set aside to macerate for at least 30 minutes.
  2. Preheat oven to 425°F (220°C).
  3. In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut in cold butter until the mixture resembles coarse crumbs.
  5. Stir in heavy cream and vanilla extract until just combined. Do not overmix.
  6. Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick rectangle.
  7. Cut out shortcakes using a biscuit cutter and place on a baking sheet.
  8. Bake for 12-15 minutes or until golden brown. Let cool slightly.
  9. To assemble, slice shortcakes in half, layer on macerated strawberries and whipped cream, and top with the other half of the shortcake.
  10. Serve immediately with additional whipped cream and strawberries.

Notes

  • For extra flavor, add a splash of lemon juice to the strawberries.
  • Shortcakes can be made ahead of time and stored in an airtight container.
