- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon fresh chives, chopped
- 1 teaspoon lemon juice
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
- Place the seasoned potatoes in the air fryer basket in a single layer, making sure they are not overcrowded.
- Air fry the potatoes for 15-20 minutes, shaking the basket halfway through, until they are golden brown and crispy.
- While the potatoes are cooking, prepare the creamy dipping sauce by mixing sour cream, mayonnaise, chives, and lemon juice in a small bowl. Season with salt and pepper to taste.
- Once the potatoes are crispy, remove them from the air fryer and serve immediately with the creamy dipping sauce.
Notes
- For extra crispy potatoes, you can soak the halved potatoes in water for 30 minutes before cooking to remove excess starch.
