Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Add pink food coloring and mix until the desired shade of pink is achieved.
- Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, leaving space in between each cookie.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on a wire rack.
- Once cooled, decorate with pink icing and sprinkles.
Notes
- For a deeper pink color, add more food coloring gradually.
- You can substitute butter with a plant-based alternative for a dairy-free version.
