Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Add pink food coloring and mix until the desired shade of pink is achieved.
  7. Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, leaving space in between each cookie.
  8. Bake for 8-10 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let cool on a wire rack.
  10. Once cooled, decorate with pink icing and sprinkles.
