  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving
  • Sesame seeds for garnish (optional)
  • Green onions, sliced for garnish (optional)

Instructions

  1. In a large skillet or wok, heat olive oil over medium-high heat.
  2. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
  3. Add ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  4. Stir in mixed vegetables and cook for another 5 minutes until they are tender-crisp.
  5. Pour in soy sauce and sesame oil, mixing everything together. Cook for an additional 2 minutes.
  6. Season with salt and pepper as needed.
  7. Serve the stir-fry over cooked rice or noodles. Garnish with sesame seeds and green onions if desired.
