Ingredients

  • 1/3 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips or raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, whole wheat flour, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined. If using, fold in the chocolate chips or raisins.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are golden.
  7. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
