- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/3 cup honey or maple syrup
- 1/3 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips or raisins (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, whole wheat flour, baking soda, cinnamon, and salt.
- In another bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until combined. If using, fold in the chocolate chips or raisins.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container at room temperature for up to a week.
- You can substitute almond flour for a gluten-free option.
- Feel free to add nuts or seeds for extra nutrition.
