Ingredients

  • 1 pound boneless, skinless chicken breast (or turkey)
  • 4 cups low-sodium chicken broth
  • 2 cups chopped carrots
  • 1 cup chopped celery
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup green beans, trimmed and cut into pieces
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale, added at the end

Instructions

  1. Place chicken breast at the bottom of the crockpot.
  2. Add chicken broth, carrots, celery, onion, garlic, diced tomatoes, green beans, thyme, oregano, salt, and pepper.
  3. Stir to combine and cover the crockpot with the lid.
  4. Cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through and vegetables are tender.
  5. Remove the chicken, shred it with two forks, and return it to the soup.
  6. Stir in the fresh spinach or kale and cook for an additional 10 minutes until wilted.
  7. Serve hot and enjoy!
