- 1 pound boneless, skinless chicken breast (or turkey)
- 4 cups low-sodium chicken broth
- 2 cups chopped carrots
- 1 cup chopped celery
- 1 cup diced onion
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup green beans, trimmed and cut into pieces
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach or kale, added at the end
Instructions
- Place chicken breast at the bottom of the crockpot.
- Add chicken broth, carrots, celery, onion, garlic, diced tomatoes, green beans, thyme, oregano, salt, and pepper.
- Stir to combine and cover the crockpot with the lid.
- Cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through and vegetables are tender.
- Remove the chicken, shred it with two forks, and return it to the soup.
- Stir in the fresh spinach or kale and cook for an additional 10 minutes until wilted.
- Serve hot and enjoy!

- This soup can be stored in the refrigerator for up to 4 days.
