Ingredients

  • 2 cups mixed bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Cooked brown rice or quinoa for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the minced garlic and grated ginger, sauté for 1 minute until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in the mixed bell peppers, broccoli, and snap peas. Cook for another 5 minutes until the vegetables are tender.
  5. Pour in the soy sauce and stir to combine. Season with salt and pepper to taste.
