- 1 lb ground beef (lean)
- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 2 tablespoons soy sauce (low sodium)
- 1 tablespoon olive oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked brown rice or quinoa for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the minced garlic and grated ginger, sauté for 1 minute until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the mixed bell peppers, broccoli, and snap peas. Cook for another 5 minutes until the vegetables are tender.
- Pour in the soy sauce and stir to combine. Season with salt and pepper to taste.
- Serve the stir-fry over cooked brown rice or quinoa.
