Ingredients

  • 2 cups rolled oats
  • 1 cup almond butter (or any nut butter of choice)
  • 1/2 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, honey (or maple syrup), cocoa powder, vanilla extract, and salt. Mix until well combined.
  2. If using, fold in dark chocolate chips and chopped nuts or seeds until evenly distributed.
  3. Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  4. Transfer the mixture into the prepared baking dish and press down firmly into an even layer.
  5. Refrigerate for at least 2 hours or until set.
  6. Once set, lift the bars out of the dish using the parchment paper overhang and cut into squares or bars.
  7. Store in an airtight container in the fridge for up to a week.
