- 2 cups rolled oats
- 1 cup almond butter (or any nut butter of choice)
- 1/2 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
- 1/4 cup chopped nuts or seeds (optional)
Instructions
- In a large mixing bowl, combine rolled oats, almond butter, honey (or maple syrup), cocoa powder, vanilla extract, and salt. Mix until well combined.
- If using, fold in dark chocolate chips and chopped nuts or seeds until evenly distributed.
- Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
- Transfer the mixture into the prepared baking dish and press down firmly into an even layer.
- Refrigerate for at least 2 hours or until set.
- Once set, lift the bars out of the dish using the parchment paper overhang and cut into squares or bars.
- Store in an airtight container in the fridge for up to a week.
