- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 can (14 oz) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic, and sauté until onion is translucent.
- Stir in grated carrot, diced zucchini, and diced red bell pepper. Cook for about 5-7 minutes until vegetables are softened.
- Add crushed tomatoes, oregano, and basil. Stir to combine and bring to a simmer.
- Reduce heat and let sauce simmer for about 15-20 minutes to allow flavors to meld.
- Season with salt and pepper to taste.
- Serve over your favorite pasta and garnish with fresh basil if desired.
