Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1 avocado, sliced
  • Balsamic vinaigrette for dressing

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  2. Add chicken breasts to the marinade and let sit for at least 30 minutes.
  3. Preheat grill to medium-high heat and grill chicken for 6-7 minutes on each side, or until cooked through.
  4. Remove chicken from grill and let rest for 5 minutes before slicing.
  5. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and avocado.
  6. Top the salad with grilled chicken slices and drizzle with balsamic vinaigrette before serving.
