- 2 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 teaspoons dried oregano
- 2 teaspoons garlic powder
- Salt and pepper to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1 avocado, sliced
- Balsamic vinaigrette for dressing
Instructions
- In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Add chicken breasts to the marinade and let sit for at least 30 minutes.
- Preheat grill to medium-high heat and grill chicken for 6-7 minutes on each side, or until cooked through.
- Remove chicken from grill and let rest for 5 minutes before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and avocado.
- Top the salad with grilled chicken slices and drizzle with balsamic vinaigrette before serving.
