- 2 cups (240g) all-purpose flour, plus more for dusting
- 3 large eggs
- 1/2 teaspoon salt
- 1 tablespoon olive oil (optional)
- Water, as needed
Instructions
- On a clean surface or in a mixing bowl, mound the flour and make a well in the center. Add the eggs, salt, and olive oil (if using) into the well.
- Using a fork, beat the eggs gently, gradually incorporating the flour from the edges of the well until a dough begins to form.
- Knead the dough by hand or with a stand mixer fitted with a dough hook for about 10 minutes until it becomes smooth and elastic. If the dough is too dry, add a little water; if too sticky, sprinkle with more flour.
- Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes.
- After resting, divide the dough into quarters. Keep the pieces you are not currently using covered to prevent them from drying out.
- Roll out one piece of dough using a pasta machine or a rolling pin until it reaches your desired thickness (typically about 1/16 inch thick). Dust with flour as needed to prevent sticking.
- Cut the rolled-out pasta into sheets that will fit your lasagna dish (about 9×13 inches is standard). Repeat with the remaining dough pieces.
- To cook the noodles, bring a large pot of salted water to a boil. Boil the noodles for about 2-3 minutes until slightly softened but still firm. Drain and lay flat on a clean kitchen towel or parchment paper to cool.
- Layer the noodles in your favorite lasagna recipe and bake as directed.
Notes
- Make sure to let the dough rest. This helps to relax the gluten, making it easier to roll out.
- If you don’t have a pasta machine, a rolling pin works well; just take your time to get it thin enough.
- Storing the uncooked sheets: You can dry the sheets for a few hours and then store them in an airtight container or freeze them for later use.
