Ingredients

  • 2 cups (240g) all-purpose flour, plus more for dusting
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (optional)
  • Water, as needed

Instructions

  1. On a clean surface or in a mixing bowl, mound the flour and make a well in the center. Add the eggs, salt, and olive oil (if using) into the well.
  2. Using a fork, beat the eggs gently, gradually incorporating the flour from the edges of the well until a dough begins to form.
  3. Knead the dough by hand or with a stand mixer fitted with a dough hook for about 10 minutes until it becomes smooth and elastic. If the dough is too dry, add a little water; if too sticky, sprinkle with more flour.
  4. Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes.
  5. After resting, divide the dough into quarters. Keep the pieces you are not currently using covered to prevent them from drying out.
  6. Roll out one piece of dough using a pasta machine or a rolling pin until it reaches your desired thickness (typically about 1/16 inch thick). Dust with flour as needed to prevent sticking.
  7. Cut the rolled-out pasta into sheets that will fit your lasagna dish (about 9×13 inches is standard). Repeat with the remaining dough pieces.
  8. To cook the noodles, bring a large pot of salted water to a boil. Boil the noodles for about 2-3 minutes until slightly softened but still firm. Drain and lay flat on a clean kitchen towel or parchment paper to cool.
  9. Layer the noodles in your favorite lasagna recipe and bake as directed.

Notes

  • Make sure to let the dough rest. This helps to relax the gluten, making it easier to roll out.
  • If you don’t have a pasta machine, a rolling pin works well; just take your time to get it thin enough.
  • Storing the uncooked sheets: You can dry the sheets for a few hours and then store them in an airtight container or freeze them for later use.
