This easy air fryer recipe combines juicy chicken and crisp vegetables, all cooked together in just 25 minutes. Perfect for a quick weeknight dinner!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the air fryer to 380°F (190°C).
  2. In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them well with the seasoning mix.
  4. Add the mixed vegetables to the bowl and toss until everything is evenly coated.
  5. Place the chicken breasts in the air fryer basket in a single layer. Arrange the vegetables around the chicken.
  6. Cook in the air fryer for 12 minutes.
  7. After 12 minutes, flip the chicken breasts and stir the vegetables.
  8. Cook for an additional 10-12 minutes until the chicken is cooked through (internal temperature of 165°F or 75°C) and the vegetables are tender.
  9. Remove from the air fryer and let rest for a few minutes.
  10. Garnish with fresh parsley before serving.

Notes

  • You can substitute the chicken breasts with thighs if preferred.
  • Feel free to use any vegetables you have on hand.
  • Cooking times may vary based on the size of the chicken pieces and the air fryer model.
