This easy air fryer recipe combines juicy chicken and crisp vegetables, all cooked together in just 25 minutes. Perfect for a quick weeknight dinner!

- 4 boneless, skinless chicken breasts
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the air fryer to 380°F (190°C).
- In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Add the chicken breasts to the bowl and coat them well with the seasoning mix.
- Add the mixed vegetables to the bowl and toss until everything is evenly coated.
- Place the chicken breasts in the air fryer basket in a single layer. Arrange the vegetables around the chicken.
- Cook in the air fryer for 12 minutes.
- After 12 minutes, flip the chicken breasts and stir the vegetables.
- Cook for an additional 10-12 minutes until the chicken is cooked through (internal temperature of 165°F or 75°C) and the vegetables are tender.
- Remove from the air fryer and let rest for a few minutes.
- Garnish with fresh parsley before serving.
Notes
- You can substitute the chicken breasts with thighs if preferred.
- Feel free to use any vegetables you have on hand.
