Ingredients

  • 2 lbs Pork Loin
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1.5 lbs Potatoes
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 2 cups Chicken Broth
  • optional Fresh Herbs

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Season the pork loin with salt, black pepper, garlic powder, onion powder, and paprika. Brush with olive oil.
  3. Place the seasoned pork loin in the air fryer basket and cook for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  4. While the pork is cooking, toss the cubed potatoes with olive oil, salt, and pepper. Place them in the air fryer after the pork loin has cooked for about 15 minutes.
  5. Cook the potatoes for 15-20 minutes or until crispy and golden brown, shaking the basket halfway through.
  6. For the gravy, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
  7. Gradually add chicken broth while whisking continuously to avoid lumps. Cook until thickened.
  8. Once the pork loin is done, let it rest for 5-10 minutes before slicing.
  9. Serve the sliced pork loin with crispy roasted potatoes and drizzle with gravy. Garnish with fresh herbs if desired.
