This juicy baked stuffed chicken breast is filled with a delicious mixture of herbs, cheese, and vegetables, served alongside a flavorful wild rice pilaf. Perfect for a hearty dinner!

- 4 chicken breasts
- 8 oz cream cheese
- 2 cups spinach
- 2 cloves garlic
- 1 cup mozzarella cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup wild rice
- 2 cups chicken broth
- 1 onion
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine softened cream cheese, chopped spinach, minced garlic, mozzarella cheese, Italian seasoning, salt, and pepper. Mix well until fully combined.
- Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the cheese and spinach mixture, securing with toothpicks if necessary.
- Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through and juices run clear.
- While the chicken is baking, prepare the wild rice pilaf. In a saucepan, heat olive oil and sauté chopped onion until translucent.
- Add the wild rice and chicken broth to the saucepan. Bring to a boil, then cover and reduce heat to low. Cook for 45 minutes or until rice is tender.
- Once the chicken is done, let it rest for a few minutes before serving. Serve the stuffed chicken breast alongside wild rice pilaf.
Notes
- For extra flavor, marinate the chicken breasts in your favorite seasoning or dressing for a few hours before stuffing.
- Feel free to customize the stuffing by adding other ingredients like sun-dried tomatoes or different herbs.
