Ingredients

  • 4 chicken breasts
  • 8 oz cream cheese
  • 2 cups spinach
  • 2 cloves garlic
  • 1 cup mozzarella cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup wild rice
  • 2 cups chicken broth
  • 1 onion
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine softened cream cheese, chopped spinach, minced garlic, mozzarella cheese, Italian seasoning, salt, and pepper. Mix well until fully combined.
  3. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast with the cheese and spinach mixture, securing with toothpicks if necessary.
  5. Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  6. Transfer the seared chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through and juices run clear.
  7. While the chicken is baking, prepare the wild rice pilaf. In a saucepan, heat olive oil and sauté chopped onion until translucent.
  8. Add the wild rice and chicken broth to the saucepan. Bring to a boil, then cover and reduce heat to low. Cook for 45 minutes or until rice is tender.
  9. Once the chicken is done, let it rest for a few minutes before serving. Serve the stuffed chicken breast alongside wild rice pilaf.

Notes

  • For extra flavor, marinate the chicken breasts in your favorite seasoning or dressing for a few hours before stuffing.
  • Feel free to customize the stuffing by adding other ingredients like sun-dried tomatoes or different herbs.
