Description
This juicy lemon chicken breast is perfectly seared and served alongside garlic butter broccolini for a deliciously healthy meal.

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 lemons (juiced and zested)
- 4 cloves garlic (minced)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 bunch of broccolini
- 3 tablespoons butter
- Fresh parsley (for garnish)
Instructions
- In a small bowl, mix together lemon juice, lemon zest, minced garlic, dried oregano, salt, and pepper.
- Place the chicken breasts in a large zip-top bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 30 minutes.
- Heat olive oil in a large skillet over medium-high heat. Remove chicken from marinade and discard the marinade.
- Add chicken to the skillet and cook for 6-7 minutes on each side until cooked through and golden brown. Remove from skillet and let rest.
- In the same skillet, melt butter and add broccolini. Sauté for 3-4 minutes until tender. Season with salt and pepper.
- Serve the chicken breasts with broccolini on the side, garnished with fresh parsley.
