- 2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- Water as needed
Instructions
- In a large bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well.
- Add the olive oil to the eggs. Using a fork, beat the eggs gently and gradually incorporate the flour from the edges of the well until the mixture forms a dough.
- Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic. If the dough is too dry, add a little water. If it’s too sticky, sprinkle with more flour.
- Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
- After resting, divide the dough into four pieces. Roll each piece out thinly with a pasta machine or a rolling pin, then cut into sheets that fit your lasagna dish.
Notes
- Make sure to keep the dough covered with a towel while you work to prevent it from drying out.
- You can dust the rolled-out noodles with flour to prevent sticking.
- If you prefer, you can also dry the noodles for later use by hanging them or laying them flat on a floured surface.
