Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • Water as needed

Instructions

  1. In a large bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well.
  2. Add the olive oil to the eggs. Using a fork, beat the eggs gently and gradually incorporate the flour from the edges of the well until the mixture forms a dough.
  3. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic. If the dough is too dry, add a little water. If it’s too sticky, sprinkle with more flour.
  4. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
  5. After resting, divide the dough into four pieces. Roll each piece out thinly with a pasta machine or a rolling pin, then cut into sheets that fit your lasagna dish.

Notes

  • Make sure to keep the dough covered with a towel while you work to prevent it from drying out.
  • You can dust the rolled-out noodles with flour to prevent sticking.
  • If you prefer, you can also dry the noodles for later use by hanging them or laying them flat on a floured surface.
