- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup corn, cooked
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine quinoa and water. Bring to a boil over high heat.
- Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed.
- Remove from heat and let it cool.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, corn, red onion, and parsley.
- Add the cooled quinoa to the vegetable mixture.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
