Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup corn, cooked
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine quinoa and water. Bring to a boil over high heat.
  2. Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed.
  3. Remove from heat and let it cool.
  4. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, corn, red onion, and parsley.
  5. Add the cooled quinoa to the vegetable mixture.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.
