- 1 cup ripe bananas, mashed (about 2–3 bananas)
- 1/2 cup sourdough starter, active or discard
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mix together the mashed bananas, sourdough starter, and melted butter until well combined.
- Add the sugar, eggs, and vanilla extract to the banana mixture, stirring until fully incorporated.
- In a separate bowl, whisk together the baking soda, salt, flour, and cinnamon (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For best results, use very ripe bananas for maximum sweetness and moisture.
- If you prefer a sweeter bread, feel free to increase the sugar to 1 1/4 cups.
- Store leftover banana bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
