- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 2/3 cup whole milk
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine flour, granulated sugar, baking powder, and salt.
- Add cold butter to the flour mixture and mix until crumbly.
- Pour in the milk and vanilla extract, stirring until just combined.
- Turn the dough onto a floured surface and gently knead a few times before patting it into a 1-inch thick circle.
- Cut out shortcakes using a round cutter and place them on a baking sheet.
- Bake for 12-15 minutes or until golden brown. Allow to cool.
- In a separate bowl, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
- To assemble, slice the shortcakes in half, layer with strawberries and whipped cream, then top with the other half.
- Serve immediately and enjoy!
Notes
- For extra flavor, consider adding a splash of lemon juice to the strawberries.
- You can also use blueberries or raspberries for variation.
