  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar (for strawberries)
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, baking powder, and salt. Add the softened butter, milk, eggs, and vanilla extract. Mix until smooth and well combined.
  3. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  4. In a separate bowl, combine the sliced strawberries and 1/4 cup granulated sugar. Toss to coat and let sit for about 30 minutes to release the juices.
  5. In another bowl, whip the heavy cream with the powdered sugar and 1 teaspoon vanilla extract until stiff peaks form.
  6. Once the cakes are completely cooled, place one layer on a serving platter. Spread a layer of whipped cream over the top, followed by a layer of strawberries.
  7. Place the second cake layer on top and repeat the process with whipped cream and strawberries. Finish with additional whipped cream and strawberries on top for decoration.
