- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 4 cups fresh strawberries, sliced
- 1/4 cup granulated sugar (for strawberries)
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, baking powder, and salt. Add the softened butter, milk, eggs, and vanilla extract. Mix until smooth and well combined.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a separate bowl, combine the sliced strawberries and 1/4 cup granulated sugar. Toss to coat and let sit for about 30 minutes to release the juices.
- In another bowl, whip the heavy cream with the powdered sugar and 1 teaspoon vanilla extract until stiff peaks form.
- Once the cakes are completely cooled, place one layer on a serving platter. Spread a layer of whipped cream over the top, followed by a layer of strawberries.
- Place the second cake layer on top and repeat the process with whipped cream and strawberries. Finish with additional whipped cream and strawberries on top for decoration.
