Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • Royal icing for decoration
  • Food coloring (red, blue, green, etc.)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together flour, baking soda, and baking powder; set aside.
  3. In a large bowl, cream together the butter and sugar until smooth.
  4. Beat in the egg, vanilla extract, and almond extract.
  5. Gradually blend in the dry ingredients until just mixed.
  6. Roll rounded teaspoonfuls of dough into balls, place onto ungreased cookie sheets, and flatten slightly.
  7. Bake 8 to 10 minutes in the preheated oven, or until golden.
  8. Let cool on wire racks before icing.
  9. Once cooled, use royal icing to decorate the cookies in fun nurse themes, such as stethoscopes, nurse hats, and medical symbols. Allow the icing to set before serving.
