  • 16 ounces gnocchi
  • 1 cup spinach, fresh
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add the chopped sun-dried tomatoes, garlic powder, and Italian seasoning. Stir to combine.
  3. Pour in the beef broth and heavy cream. Bring to a simmer.
  4. Add the gnocchi and stir to coat in the sauce. Cook for about 5-7 minutes, or until the gnocchi are tender.
  5. Stir in the fresh spinach and Parmesan cheese. Cook until the spinach wilts.
  6. Season with salt and pepper to taste. Garnish with fresh basil if desired.
  7. Serve immediately.

Notes

  • Feel free to add other vegetables, such as bell peppers or zucchini.
  • For a lighter version, you can substitute ground turkey for ground beef.
