- 1 pound ground beef
- 1 cup sun-dried tomatoes, chopped
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup beef broth
- 1 cup heavy cream
- 16 ounces gnocchi
- 1 cup spinach, fresh
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add the chopped sun-dried tomatoes, garlic powder, and Italian seasoning. Stir to combine.
- Pour in the beef broth and heavy cream. Bring to a simmer.
- Add the gnocchi and stir to coat in the sauce. Cook for about 5-7 minutes, or until the gnocchi are tender.
- Stir in the fresh spinach and Parmesan cheese. Cook until the spinach wilts.
- Season with salt and pepper to taste. Garnish with fresh basil if desired.
- Serve immediately.
Notes
- Feel free to add other vegetables, such as bell peppers or zucchini.
- For a lighter version, you can substitute ground turkey for ground beef.
