- 4 cups fresh peaches, sliced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, and vanilla extract. Toss to combine and set aside.
- In another bowl, mix together the rolled oats, flour, brown sugar, cinnamon, and salt.
- Pour the melted butter into the oat mixture and stir until crumbly.
- Spread the peach mixture evenly in a greased 9×13 inch baking dish.
- Top the peaches with the oat crumble mixture, spreading it evenly over the top.
- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the peaches are bubbly.
- Let cool for a few minutes before serving warm with vanilla ice cream.
