  • 1 cup granulated sugar, divided
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • Vanilla ice cream, for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Toss until the peaches are well coated.
  3. In another bowl, mix the flour, remaining sugar, baking powder, and salt. Gradually stir in the milk and melted butter until just combined.
  4. Pour the batter into a greased 9×13-inch baking dish. Spoon the peach mixture over the top, including any juices.
  5. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Let cool slightly before serving. Serve warm with a scoop of vanilla ice cream, if desired.

Notes

  • You can use frozen peaches if fresh ones are not available. Thaw and drain excess liquid before using.
  • For added flavor, consider adding a splash of vanilla extract to the peach mixture.
