A delicious and classic Polish dessert made with fresh apples and a buttery crust, perfect for any occasion.

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup unsalted butter, chilled and diced
- 1 egg yolk
- 4 to 6 tablespoons ice water
- 6 medium apples, peeled, cored, and sliced
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1/4 cup brown sugar
Instructions
- In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Stir in the egg yolk and enough ice water to form a dough. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat the oven to 375°F (190°C).
- In another bowl, toss the sliced apples with cinnamon, lemon juice, and brown sugar.
- Roll out one disc of dough on a floured surface to fit a 9-inch pie plate. Place it in the pie plate and fill with the apple mixture.
- Roll out the second disc of dough and place it over the apples. Seal and flute the edges. Cut slits in the top to allow steam to escape.
- Bake in the preheated oven for 45 to 50 minutes, until the apples are soft and the crust is golden brown.
- Cool before serving. Enjoy your Polish apple pie with a scoop of vanilla ice cream!
Notes
- For a sweeter pie, you can add more sugar to the apple filling.
- Feel free to add raisins or nuts for extra flavor and texture.
