- 1 cup quinoa, rinsed
- 2 cups water
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 2 cloves garlic, minced
- 1 cup cooked chickpeas
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Optional toppings: sesame seeds, green onions, or avocado
Instructions
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
- In a large skillet, heat olive oil over medium heat. Add the diced red bell pepper, broccoli florets, and carrot. Stir-fry for 5-7 minutes until vegetables are tender but still crisp.
- Add minced garlic and cooked chickpeas to the skillet. Stir and cook for another 2 minutes.
- Stir in the cooked quinoa, soy sauce, and sesame oil. Mix well and cook for an additional 2-3 minutes to heat through.
- Season with salt and pepper to taste. Serve hot, topped with sesame seeds, green onions, or avocado if desired.
