- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté for 2-3 minutes until fragrant.
- Add bell pepper and zucchini to the skillet, cooking for an additional 5 minutes until softened.
- Stir in cherry tomatoes and chickpeas, then season with cumin, salt, and pepper. Cook for another 5 minutes until heated through.
- Fluff cooked quinoa with a fork and add to the skillet, mixing everything together.
- Serve warm, garnished with fresh parsley.
