This rich and creamy raspberry chocolate mousse combines the tartness of fresh raspberries with the decadence of dark chocolate for a delightful dessert.

- 1 cup fresh raspberries
- 6 ounces dark chocolate, chopped
- 2 tablespoons sugar
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- Whipped cream and additional raspberries for garnish
Instructions
- In a small saucepan, combine sugar and water. Heat over medium heat until sugar dissolves. Remove from heat and stir in chopped dark chocolate until melted and smooth. Stir in vanilla extract and let cool slightly.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold in the melted chocolate mixture until combined.
- In serving cups, layer the chocolate mousse with fresh raspberries. Start with a layer of mousse, then add a layer of raspberries, and repeat until cups are filled.
- Chill in the refrigerator for at least 2 hours before serving.
- Garnish with whipped cream and additional raspberries before serving.
