Description
A classic Russian dessert, this multi-layered honey cake is rich and flavorful, perfect for any occasion.
Ingredients
Scale
- 3 cups all-purpose flour
- 1 cup honey
- 1 cup sugar
- 1/2 cup unsalted butter
- 2 large eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups sour cream
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Chopped nuts or chocolate shavings for decoration (optional)
Instructions
- In a saucepan, combine honey, sugar, and butter. Heat over low heat until melted and smooth. Remove from heat and let cool slightly.
- In a mixing bowl, whisk together eggs and baking soda. Add the honey mixture and mix well.
- Gradually add flour, mixing until a dough forms. Divide the dough into 8 equal parts.
- Roll each part into a thin circle (about 8 inches in diameter) on a floured surface. Bake at 350°F (175°C) for 5-7 minutes until golden.
- For the cream, mix sour cream, powdered sugar, and vanilla extract until smooth.
- Once the layers are baked and cooled, spread the cream mixture between each layer.
- Cover the top and sides of the cake with the remaining cream. Decorate with nuts or chocolate shavings if desired.
- Refrigerate for at least 4 hours or overnight for the best flavor.
Notes
- The longer the cake sits, the better the flavors meld together.
- You can adjust sweetness by adding more or less sugar to the cream.
