Description
A classic Russian dessert, Medovik is a multi-layered honey cake that is rich, sweet, and perfect for any occasion. The honey adds a unique flavor that sets it apart from other cakes.

- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 2 large eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups sour cream
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, cream together the softened butter, granulated sugar, and honey until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the baking soda and salt.
- Gradually add the flour, mixing until just combined. Divide the dough into 6 equal parts.
- Roll out each part on a floured surface into a thin circle, about 1/8 inch thick. Place each circle onto the prepared pans.
- Bake in the preheated oven for 5-7 minutes, or until lightly browned. Let cool in the pans for a few minutes, then transfer to wire racks to cool completely.
- In a medium bowl, combine the sour cream, powdered sugar, and vanilla extract. Mix until smooth.
- Once the cake layers are cool, spread a layer of the sour cream mixture between each layer and on top of the cake. Reserve some for decorating the sides.
- Chill the cake in the refrigerator for at least 4 hours, preferably overnight, before serving.
Notes
- For an authentic touch, sprinkle crushed nuts or crumbs from the cake layers on the sides of the cake.
- You can also add layers of fruit jam between the cake layers for extra flavor.
