Description

A classic Russian dessert, Medovik is a multi-layered honey cake that is rich, sweet, and perfect for any occasion. The honey adds a unique flavor that sets it apart from other cakes.


Ingredients

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups sour cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the softened butter, granulated sugar, and honey until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Mix in the baking soda and salt.
  4. Gradually add the flour, mixing until just combined. Divide the dough into 6 equal parts.
  5. Roll out each part on a floured surface into a thin circle, about 1/8 inch thick. Place each circle onto the prepared pans.
  6. Bake in the preheated oven for 5-7 minutes, or until lightly browned. Let cool in the pans for a few minutes, then transfer to wire racks to cool completely.
  7. In a medium bowl, combine the sour cream, powdered sugar, and vanilla extract. Mix until smooth.
  8. Once the cake layers are cool, spread a layer of the sour cream mixture between each layer and on top of the cake. Reserve some for decorating the sides.
  9. Chill the cake in the refrigerator for at least 4 hours, preferably overnight, before serving.

Notes

  • For an authentic touch, sprinkle crushed nuts or crumbs from the cake layers on the sides of the cake.
  • You can also add layers of fruit jam between the cake layers for extra flavor.
