- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 lemons (zested and juiced)
- 4 cloves garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
- 1 bunch broccolini
- 4 tablespoons unsalted butter
- Fresh parsley (chopped, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, lemon zest, half of the lemon juice, garlic, salt, black pepper, paprika, and red pepper flakes.
- Place the chicken breasts in a baking dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
- While the chicken is marinating, prepare the broccolini. In a large skillet over medium heat, melt the butter. Add the broccolini and sauté for about 5-7 minutes until tender and vibrant green.
- Add the remaining lemon juice to the broccolini and season with salt and pepper. Stir well and remove from heat.
- Once marinated, place the chicken in the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the oven and let it rest for 5 minutes before slicing.
- Serve the juicy lemon chicken breast alongside the garlic butter broccolini, garnished with fresh parsley.
Notes
- For extra flavor, marinate the chicken for up to 2 hours in the refrigerator.
- Feel free to substitute broccolini with asparagus or green beans if preferred.
