Description
This savory teriyaki chicken recipe is quick and easy, paired perfectly with sticky rice and vibrant broccoli for a delicious meal.
Ingredients
Scale
- 1 lb chicken thighs
- 1 cup teriyaki sauce
- 1 cup sticky rice
- 2 cups broccoli florets
- 1 1/2 cups water
- 2 tablespoons olive oil
- 1 tablespoon sesame seeds
- 2 green onions
Instructions
- In a medium saucepan, combine rinsed sticky rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.
- While the rice is cooking, heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- Pour teriyaki sauce over the cooked chicken and stir to coat. Let it simmer for an additional 2-3 minutes.
- In the last few minutes of cooking the chicken, add broccoli florets to the skillet and steam until tender but still bright green, about 3-4 minutes.
- Once the rice is done, fluff with a fork and serve alongside the teriyaki chicken and broccoli.
- Garnish with sesame seeds and sliced green onions before serving.
Notes
- Feel free to add more vegetables like bell peppers or snap peas for additional color and nutrients.
- For a spicier kick, add some red pepper flakes to the chicken while cooking.
