Ingredients

  • 1 lb mixed seafood (shrimp, scallops, and fish fillets)
  • 2 tablespoons coconut oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 can (14 oz) coconut milk
  • 1 cup vegetable or fish stock
  • 1 tablespoon fish sauce
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat coconut oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Add curry powder and turmeric powder, stirring well to combine and cook for about 2 minutes.
  4. Pour in the coconut milk and vegetable or fish stock, bringing the mixture to a gentle simmer.
  5. Add the mixed seafood to the pot, cover, and cook for about 5-7 minutes, or until the seafood is cooked through.
  6. Stir in fish sauce and lime juice, adjusting seasoning with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
