- 1 lb mixed seafood (shrimp, scallops, and fish fillets)
- 2 tablespoons coconut oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon turmeric powder
- 1 can (14 oz) coconut milk
- 1 cup vegetable or fish stock
- 1 tablespoon fish sauce
- Juice of 1 lime
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat coconut oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
- Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
- Add curry powder and turmeric powder, stirring well to combine and cook for about 2 minutes.
- Pour in the coconut milk and vegetable or fish stock, bringing the mixture to a gentle simmer.
- Add the mixed seafood to the pot, cover, and cook for about 5-7 minutes, or until the seafood is cooked through.
- Stir in fish sauce and lime juice, adjusting seasoning with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
