- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 cups mixed greens (spinach, arugula, etc.)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 avocado, diced
- 1/4 cup red onion, thinly sliced
- Juice of 1 lemon
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- In a bowl, toss the shrimp with olive oil, garlic powder, salt, and pepper.
- Heat a skillet over medium heat and cook the shrimp for 2-3 minutes on each side until pink and opaque.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, avocado, and red onion.
- Add the cooked shrimp on top of the salad.
- Drizzle with lemon juice and toss gently to combine.
- Garnish with fresh herbs and serve immediately.
