Slow Cooker Beef Bourguignon: 3 Comforting Delights

A hearty and flavorful slow cooker beef bourguignon, served alongside creamy buttery mashed potatoes and crusty garlic bread for a comforting meal.

Instructions

  1. In a large bowl, toss the beef cubes with flour until well coated.
  2. In a large skillet, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the skillet.
  3. In the same skillet, sear the beef in batches until browned on all sides. Transfer to the slow cooker.
  4. Add the cooked bacon, red wine, beef broth, onion, carrots, garlic, bay leaf, thyme, black pepper, and salt to the slow cooker. Stir to combine.
  5. Add the halved baby potatoes on top of the meat and vegetables. Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender.
  6. For the mashed potatoes, peel and chop potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot.
  7. Add butter and milk to the potatoes, mashing until creamy and smooth. Season with salt and pepper to taste.
  8. Serve the beef bourguignon over the creamy mashed potatoes with crusty garlic bread on the side. Garnish with fresh parsley.

Notes

  • For extra flavor, let the beef marinate in the wine overnight before cooking.
  • Feel free to add in mushrooms or pearl onions for additional texture and flavor.
