Instructions
- In a large bowl, toss the beef cubes with flour until well coated.
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the skillet.
- In the same skillet, sear the beef in batches until browned on all sides. Transfer to the slow cooker.
- Add the cooked bacon, red wine, beef broth, onion, carrots, garlic, bay leaf, thyme, black pepper, and salt to the slow cooker. Stir to combine.
- Add the halved baby potatoes on top of the meat and vegetables. Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender.
- For the mashed potatoes, peel and chop potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot.
- Add butter and milk to the potatoes, mashing until creamy and smooth. Season with salt and pepper to taste.
- Serve the beef bourguignon over the creamy mashed potatoes with crusty garlic bread on the side. Garnish with fresh parsley.
Notes
- For extra flavor, let the beef marinate in the wine overnight before cooking.
- Feel free to add in mushrooms or pearl onions for additional texture and flavor.
