This smoked chocolate mousse brings a unique twist to a classic dessert. The gentle smoky flavor enhances the rich chocolate, making it perfect for any gathering.


Ingredients

  • 8 oz dark chocolate (chopped)
  • 1 1/2 cups heavy cream (divided)
  • 1/4 cup sugar
  • 3 eggs (separated)
  • 1/2 teaspoon smoked sea salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your smoker to 225°F (107°C) using wood chips of your choice, such as hickory or cherry.
  2. Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let it cool slightly.
  3. In a separate bowl, whip 1 cup of heavy cream until soft peaks form. Set aside.
  4. In another bowl, beat the egg yolks and sugar until pale and creamy. Stir in the melted chocolate, smoked sea salt, and vanilla extract.
  5. Gently fold the whipped cream into the chocolate mixture until just combined.
  6. In a clean bowl, whip the egg whites until stiff peaks form. Carefully fold the egg whites into the chocolate mixture until no white streaks remain.
  7. Transfer the mousse to individual serving dishes and place them in the smoker. Smoke for about 30 minutes, then remove from the smoker.
  8. Chill in the refrigerator for at least 2 hours before serving. Top with remaining whipped cream and a sprinkle of smoked sea salt.

Notes

  • For a deeper smoky flavor, consider smoking the chocolate itself before melting it.
