This smoked chocolate mousse brings a unique twist to a classic dessert. The gentle smoky flavor enhances the rich chocolate, making it perfect for any gathering.

- 8 oz dark chocolate (chopped)
- 1 1/2 cups heavy cream (divided)
- 1/4 cup sugar
- 3 eggs (separated)
- 1/2 teaspoon smoked sea salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your smoker to 225°F (107°C) using wood chips of your choice, such as hickory or cherry.
- Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let it cool slightly.
- In a separate bowl, whip 1 cup of heavy cream until soft peaks form. Set aside.
- In another bowl, beat the egg yolks and sugar until pale and creamy. Stir in the melted chocolate, smoked sea salt, and vanilla extract.
- Gently fold the whipped cream into the chocolate mixture until just combined.
- In a clean bowl, whip the egg whites until stiff peaks form. Carefully fold the egg whites into the chocolate mixture until no white streaks remain.
- Transfer the mousse to individual serving dishes and place them in the smoker. Smoke for about 30 minutes, then remove from the smoker.
- Chill in the refrigerator for at least 2 hours before serving. Top with remaining whipped cream and a sprinkle of smoked sea salt.
Notes
- For a deeper smoky flavor, consider smoking the chocolate itself before melting it.
- You can use different types of chocolate for varying flavors, such as milk or white chocolate.
