Instructions

  1. In a bowl, combine sliced strawberries with 1/4 cup of sugar. Toss and let sit for 30 minutes to macerate.
  2. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together flour, baking powder, salt, and remaining sugar.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in heavy cream and vanilla extract until just combined.
  6. Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick rectangle and cut into rounds.
  7. Place the rounds on the prepared baking sheet. Brush with heavy cream.
  8. Bake for 15-20 minutes or until golden brown.
  9. Let the shortcakes cool slightly before serving.
  10. To assemble, slice the shortcakes in half, layer with macerated strawberries and whipped cream, and replace the top.
