- 4 cups Fresh strawberries
- 1/2 cup Granulated sugar
- 2 cups All-purpose flour
- 1 tablespoon Baking powder
- 1/2 teaspoon Salt
- 1/2 cup Unsalted butter
- 1 cup Heavy cream
- 1 teaspoon Vanilla extract
Instructions
- In a bowl, combine sliced strawberries with 1/4 cup of sugar. Toss and let sit for 30 minutes to macerate.
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and remaining sugar.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in heavy cream and vanilla extract until just combined.
- Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick rectangle and cut into rounds.
- Place the rounds on the prepared baking sheet. Brush with heavy cream.
- Bake for 15-20 minutes or until golden brown.
- Let the shortcakes cool slightly before serving.
- To assemble, slice the shortcakes in half, layer with macerated strawberries and whipped cream, and replace the top.
Notes
- For a richer flavor, consider adding a tablespoon of lemon zest to the strawberries.
- You can substitute heavy cream with whipped topping if desired.
