A classic dessert featuring layers of sweetened strawberries, fluffy whipped cream, and tender shortcake biscuits.


Ingredients

  • 1 pound Fresh strawberries
  • 1/4 cup Granulated sugar
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a medium bowl, combine sliced strawberries and sugar. Toss to coat and set aside to macerate for 30 minutes.
  3. In a large bowl, whisk together flour, baking powder, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the heavy cream and vanilla extract until just combined.
  6. Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick round.
  7. Cut out biscuits using a floured cutter and place on a baking sheet.
  8. Brush the tops with extra cream and bake for 15-20 minutes until golden brown.
  9. Let biscuits cool slightly, then split them in half.
  10. Layer strawberries and whipped cream between the biscuit halves and on top. Serve immediately.

Notes

  • For the whipped cream, simply beat heavy cream with a little sugar until stiff peaks form.
  • You can substitute the strawberries with other berries like blueberries or raspberries.
