Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and bell pepper, and sauté until soft, about 5 minutes.
  3. Add the garlic and cook for another minute until fragrant.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  5. Stir in the diced sweet potatoes, paprika, cumin, salt, and pepper. Mix well.
  6. Cover the skillet and reduce heat to low. Cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender.
  7. Once cooked, remove from heat and garnish with fresh parsley if desired.
  8. Serve warm and enjoy your healthy one-pan dinner!
