- 1 pound ground beef
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and bell pepper, and sauté until soft, about 5 minutes.
- Add the garlic and cook for another minute until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced sweet potatoes, paprika, cumin, salt, and pepper. Mix well.
- Cover the skillet and reduce heat to low. Cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender.
- Once cooked, remove from heat and garnish with fresh parsley if desired.
- Serve warm and enjoy your healthy one-pan dinner!

- Feel free to add other vegetables such as spinach or zucchini for added nutrition.
