  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or frozen
  • 1 bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup shredded cheddar cheese
  • 1 cup French dressing
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a skillet over medium heat, brown the ground beef or turkey. Drain excess fat if necessary. Stir in taco seasoning and prepare according to package instructions.
  3. In a large bowl, combine the cooked pasta, seasoned meat, black beans, cherry tomatoes, corn, bell pepper, red onion, and cheddar cheese.
