- 8 ounces rotini pasta
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or frozen
- 1 bell pepper, diced
- 1/2 cup red onion, diced
- 1 cup shredded cheddar cheese
- 1 cup French dressing
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a skillet over medium heat, brown the ground beef or turkey. Drain excess fat if necessary. Stir in taco seasoning and prepare according to package instructions.
- In a large bowl, combine the cooked pasta, seasoned meat, black beans, cherry tomatoes, corn, bell pepper, red onion, and cheddar cheese.
- Pour the French dressing over the salad and toss until everything is evenly coated. Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
