Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Then add the buttermilk and vanilla extract, mixing until combined.
- In another bowl, whisk together the flour, baking powder, baking soda, cocoa powder (if using), and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
