Description
A quick and easy recipe for tender beef and broccoli made in the Instant Pot, ready in just 20 minutes.
Ingredients
Scale
- 1 pound flank steak, sliced thinly against the grain
- 2 cups broccoli florets
- 1/4 cup soy sauce
- 1/4 cup beef broth
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a bowl, combine soy sauce, beef broth, brown sugar, minced garlic, and sesame oil. Stir well.
- Add the sliced flank steak to the bowl and marinate for 10 minutes.
- Turn on the Instant Pot and select the ‘Sauté’ function. Once hot, add the marinated beef (reserve the marinade) and sauté until browned, about 3-4 minutes.
- Pour the reserved marinade over the beef in the Instant Pot.
- Add the broccoli florets on top of the beef.
- Close the lid of the Instant Pot and set the valve to sealing. Select ‘Manual’ and cook on high pressure for 3 minutes.
- Once the cooking time is up, carefully quick release the pressure.
- Remove the broccoli and beef from the pot and set aside.
- To thicken the sauce, turn on the ‘Sauté’ function again, combine cornstarch with a little water to create a slurry, and stir it into the sauce until thickened.
- Serve the beef and broccoli over cooked rice and drizzle with the thickened sauce.
Notes
- Feel free to add other vegetables, such as bell peppers or snap peas, for extra color and nutrition.
- Adjust the soy sauce amount to taste; you can use low-sodium soy sauce if preferred.
- For a spicier version, add red pepper flakes or a dash of hot sauce.
