Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear it in the pot until browned on all sides, about 4-5 minutes per side. Remove the roast and set aside.
  3. In the same pot, add chopped onion and minced garlic. Sauté until softened, about 2-3 minutes.
  4. Add Worcestershire sauce, then return the roast to the pot. Pour in the beef broth, and add rosemary and thyme.
  5. Cover the pot and transfer it to the preheated oven. Cook for 3-4 hours, or until the roast is tender and easily shredded with a fork.
  6. While the roast is cooking, prepare the crispy roasted potatoes. Toss halved baby potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread them out on a baking sheet.
  7. After the roast has cooked for 2 hours, add the potatoes to the oven. Roast for 30-40 minutes, or until golden and crispy.
  8. To make the gravy, remove the roast from the pot and set aside. Whisk in flour into the pot juices over medium heat until smooth. Slowly add reserved beef broth, whisking continuously until thickened. Season with salt and pepper.
  9. Slice the chuck roast and serve with crispy roasted potatoes and gravy on the side.

Notes

  • For extra flavor, marinate the chuck roast overnight in the refrigerator.
  • Feel free to add vegetables like carrots or celery to the pot for additional flavor.
