- 1 1/4 cups All-purpose flour
- 1/2 cup Unsalted butter, chilled and cubed
- 1/4 cup Powdered sugar
- 1/4 teaspoon Salt
- 3 large Eggs
- 1 cup Granulated sugar
- 1/2 cup Fresh lemon juice
- 1 tablespoon Lemon zest
- 1/4 cup Heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the flour, powdered sugar, and salt. Add the chilled butter and mix until crumbly.
- Press the mixture into a tart pan to form the crust. Prick the bottom with a fork and bake for 15 minutes until golden.
- In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and heavy cream until smooth.
- Pour the filling into the baked crust and return to the oven. Bake for an additional 20-25 minutes until set.
- Allow to cool, then chill in the refrigerator for at least 2 hours before serving.
Notes
- For best results, use fresh lemons for juice and zest.
- You can dust with powdered sugar before serving for added sweetness.
