Ingredients

  • 1/2 cup Unsalted butter, chilled and cubed
  • 1/4 cup Powdered sugar
  • 1/4 teaspoon Salt
  • 3 large Eggs
  • 1 cup Granulated sugar
  • 1/2 cup Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 1/4 cup Heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, powdered sugar, and salt. Add the chilled butter and mix until crumbly.
  3. Press the mixture into a tart pan to form the crust. Prick the bottom with a fork and bake for 15 minutes until golden.
  4. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and heavy cream until smooth.
  5. Pour the filling into the baked crust and return to the oven. Bake for an additional 20-25 minutes until set.
  6. Allow to cool, then chill in the refrigerator for at least 2 hours before serving.
